Chilli, Lime and Beef Noodle Salad

An Asian style chilli, lime and beef noodle salad.

Ingredients

  • 3 tbsp lime juice
  • 1- 2 red chillies, sliced
  • 1 tsp finely grated ginger
  • 1- 2 tsp brown sugar
  • 1/4 tsp soy sauce
  • 1 clove garlic, crushed
  • 1 tbsp chopped coriander
  • 125 g rice vermicelli noodles
  • 40 g / 2 tbsp Flora Pro.Activ Buttery or
  • 40 g / 2 tbsp Flora Original Spread
  • 4 lean beef rump steaks, 500 g each
  • 1 red onion, sliced
  • 1 large carrot, sliced
  • 1 bunch broccolini, trimmed
  • 2 cups wild rocket, to serve

Directions

  1. To make the dressing, combine all the ingredients in a bowl and mix to combine. Taste and adjust flavours to liking.
  2. To make the noodles, place the noodles in a bowl and cover with boiling water. Stand, stirring occasionally to separate the noodles and when soft, drain.
  3. Heat Flora pro-activ in a non-stick pan over a medium heat and cook steaks as desired. Remove from the pan, cover loosely with foil and rest.
  4. Cook the broccolini in a little boiling water in a frying pan and drain.
  5. Slice the rested steak into thin pieces.
  6. Combine noodles, onion, carrot, sliced steak and broccolini in a large bowl. Pour in dressing and toss well to combine.
  7. Garnish with rocket to serve.
  8. TIP- The dressing can be made with less lime juice and with or without chill. Serve quartered limes and sliced chilli in a dish to be added as liked.
