Caramelised Pear, Spinach and Pecan Salad

Ingredients

  • 1/2 cup pecan half
  • 20 grams Flora ProActiv buttery spread
  • 1 tbsp brown sugar
  • 1 firm pear thinly sliced
  • 1/4 tsp freshly grated nutmeg
  • 4 cups trimmed spinach leaves
  • 40 grams crumbled reduced-fat feta cheese

Instructions

  1. Heat a large non-stick frying pan over a medium heat and add the pecans. Stir until golden brown. Set aside.
  2. Add the Flora pro-activ and brown sugar in the pan and stir until the sugar has dissolved. Add the pear slices and cook, turning occasionally until golden brown and caramelised.
  3. Stir in the nutmeg and mix well.
  4. Place spinach leaves in a bowl. Place pears over the spinach, and toss to mix through.
  5. Serve sprinkled with feta and walnuts.
