Maple Syrup, Balsamic and Coriander Pumpkin

Great cholesterol lowering side dish recipe to accompany any meal.

  • 700 g butternut pumpkin
  • 20 g / 1 tbsp Flora Pro.Activ Buttery or original
  • 1 1/2 tbsp maple syrup
  • 1/4 cup loosely packed coriander leaves
  • 1 tsp balsamic vinegar


  1. Peel and cut pumpkin into 8 chunks. Boil, steam or microwave until cooked and if necessary drain.
  2. Heat Flora pro-activ and maple syrup in a non-stick pan. When the syrup starts bubbling, add the pumpkin. Coat all sides of pumpkin with sauce and cook until tender. Remove from the heat, sprinkle with coriander and drizzle with Balsamic vinegar.
  3. Serve with grilled, barbecued or roasted lean chicken, duck or turkey breasts.
  4. TIP – Golden syrup or honey could be used instead of maple syrup.
