Herb Crumbed Mushroom with Tomatoes

Great cholesterol lowering side dish recipe to accompany any meal.

Ingredients

  • 20 g / 1 tbsp Flora Pro.Activ Buttery or original
  • 2 slices wholegrain bread
  • 1 tbsp chopped parsley
  • 2 tsp thyme leaves
  • 8 mushroom cups, about 400 g, trimmed stalks removed
  • 250 g cherry tomatoes, halved

Directions

  1. Preheat oven to 180°C. Grease a 20 cm base x 5cm deep square oven proof dish with 1 tsp of the Flora pro-activ.
  2. To make the crumb mixture, break the bread into pieces and place into the bowl of a small food processor. Add parsley and 1 tsp thyme and process until the bread is crumbed. Add the remaining Flora pro-activ and process until mixed well.
  3. Arrange the mushrooms stalk side up in the prepared dish, and add tomatoes to dish. Drizzle 2 tbsp of water and sprinkle the remaining thyme over mushrooms and tomatoes. Evenly sprinkle the crumb mixture into each mushroom.
  4. Bake for 30 minutes or until golden.
  5. Serve with barbecued or grilled meat, chicken or fish as part of a roast meal.
  6. TIP – This dish would make a great brunch accompaniment to scrambled or poached eggs.
